Healthy Choice # 1 Carrot-Beetroot Curry

Carrot –Beetroot along with Fenugreek Leaves is a Healthy combo to have with steamed rice or chapatti.Very simple to Prepare and Tasty recipe Sweetness of Carrot and Beetroot all alone in this dish

with slight touch of Red chilly  Powder to dominate that sweetness and over to this fresh fenugreek leaves adds a nice aroma to the dish making it more flavorful and a healthy combo .we all know that Carrot are rich in Vitamin – A are also rich in dietary fiber , antioxidants and minerals . Beetroot are a rich source of potent antioxidants and nutrients, including magnesium, sodium, potassium and vitamin C.Beetroot juice has been shown to lower blood pressure and thus help prevent  cardio vascular problems.Fenugreek Leaves are really good for nursing mothers it is used to increase milk supply.Drinking 1 cup of fenugreek tea per day, made from the leaves, is said to relieve the discomfort of arthritis .Mostly Fenugreek seeds are swallowed raw early in the morning with warm water, before brushing the teeth and before drinking tea or coffee, where they are supposed to have a therapeutic and healing effect on joint pains, without any side effects.Fenugreek contains high dietary fiber, so a few seeds taken with warm water before going to sleep helps avoiding constipation.

4 medium Carrots chopped

3 Beet roots Chopped

1 Onion finely chopped

2-3 Green chilies chopped

Fenugreek Leaves – Handful

Salt – 1/2 Tsp.

Red chilly Powder –1 Tsp.

Mustard Seeds – 1 Tsp.

Garlic cloves-2 crushed

Coriander Powder –1 Tsp.

Take  a Pan Add 2 Tsp. of oil , when the Oil is hot add Onions ,Garlic and Green chilies and mustard Seeds let them splutter in the oil and then time to add our fresh Fenugreek Leaves let them roast in the oil when these leaves are being toasted in the oil it gives a nice aroma …. then time to add our veggies (carrot and Beetroot ) Let them cook with a lid by adding required amount of salt and Red Chilly Powder  … It doesn’t take much time to cook when you touch carrot or beetroot pieces they should be tender or soft enough then its done .then add Coriander Powder Garnish with Cilantro or Coriander Leaves
