Healthy choice # 4 Ginger Rice

 

I was Little bit hesitant to try this recipe when I saw this on Television because my kid doesn't like spicy but when he gave a green signal to this rice dish then am ready to do it again n again  . Spiciness of ginger is over powered with the Sweetness of Cashew Nuts So no where you feel the spice in this rice dish at the same time you can have it as it is  just plain rice … with out going for any side dish for this rice variety …. I loved it and the process is also very simple n easy to prepare …

 

This is a good variation of rice dish when your suffering with cold and cough . Cashew nuts are significant sources of iron (essential for red blood cell function and enzyme activity), magnesium (promotes energy release and bone growth), phosphorus (builds bones and teeth), zinc (essential to digestion and metabolism) and selenium (has important antioxidant properties, thus protecting the body from cancer).

Cashew nuts are good for Pregnant ladies because babies in the womb start developing their brains for the first 3 months so its really good for brain development ……we all know that 60% of carbohydrates and 30% protein and 10% fat should be taken on a regular diet basis so these Cashew nuts are considered to be  a good source of  fat ..Ginger being know for its medicinal values just like Turmeric Ginger can relieve nausea and relieves indigestion and flatulence. It discourages blood clots, stimulates circulation and may relieve rheumatism. It also has calming, anti-spasmodic and anti-inflammatory properties.. Ginger helps to maintain good digestion . on a whole this rice is good for pregnant ladies ,after delivery mother can have this and for school going children .

Preparation Time : 5-10 Minutes.

Ingredients :

Cooked Rice  – 1 Cup

Ginger paste – 2 Tsp.

Bay leaves-3

Green chilies-5-6 Slit

Cashew nuts- 1/2 Cup

1 onion Thinly sliced

Mint leaves – Few( I used Dried mint Leaves Powder )

Salt – To Taste

Butter or ghee – 2 Tbsp..

Add butter or Ghee when its hot then add bay leaves and onions , green chilies let them fry until  green chilies  &  onions change its color add cashew nuts let it fry until cashew nuts are little brown in color then  add ginger paste at this moment you get a nice aroma of ginger flavor add salt , cooked rice ,mint leaves mix it well serve hot .

Verdict :Absolutely loved this dish and will do this one again and again!!! Lovely rice! I wouldn't say it's spicy, but it sure is tasty!

Tip:Mint Leaves I warp it on brown bag and then let them dry and use it when ever required .you can see in the above recipe n picture I used dried mint leaves.

To reduce sodium and added fats in the diet, avoid salted, oil-roasted cashew nuts.
