Palak –Gongura Curry (Red Sorrel and Spinach Gravy) Goes well with Steamed Rice and Naan .Preparation time is 15 minutes .Recently I came to know that Green Leafy Vegetables has lot of calcium in them so avoided milk in my break fast just to get rid off the excess Fat .
Sorrel serves up roughage in the form of fiber, This nutrient promotes the health of your bowels, helping to prevent diarrhea and constipation. You will also get 1 g of protein per serving. This amount will not meet your daily need, so be sure to supplement your diet with protein-rich foods to consume 46 to 56 g daily. Rich in Vitamin C eating foods high in vitamin C helps your body heal properly .eating Sorrel Leaves provides good amount of Calcium and Iron .and we know about Green Leafy Vegetables like Spinach low in calories, low in fat , high in protein per calorie, high in dietary fiber , high in Iron and Calcium , Vitamin C.
Ingredients:
1/2 cup Red Sorrel Leaves ( Gongura Leaves)
1/2 Cup Spinach Leaves
1 medium onion finely sliced
1 Tomato Finely chopped
Garlic cloves- 5 crushed .
Green chilies 2-3
Dry ingredients :
Red chilly powder- To Taste
2 Tsp. coriander powder
Cinnamon powder – 1/4 Tsp.
Garam masala – 1/4 Tsp.
Salt – To Taste
Mari nation : Take a bowl add 1/4 cup of curd with Tsp of Ginger Garlic paste , Tsp. Red Chilly Powder and Pinch of Salt and 1/4 Tsp. chat masala Powder add Paneer slices to it and Mix well . Let the marinated Paneer Sit in Refrigerator for 15- 20 minutes and then shallow fry them in an oil n keep it aside. My Lil one is helping me in marinating Paneer Slices .
Wash the Leaves of Red sorrel and Spinach and boil them in a bowl along with 1/2 sliced onions , green chilies and 1/2 of tomato when the water is boiled enough let it cool for a while and grind to a paste and keep it aside.
Take a pan add 2 Tsp. oil and then add remaining Onions and Garlic cloves let them fry in an oil so that raw flavor goes away and then add remaining tomato cook it for a while then add all the dry ingredients along with Salt until it coats well with dry ingredients .Add 1/4 cup of water let the gravy boil after some time add in our ground paste Let it cook for few minutes until gravy is thick .Garnish with Fried Paneer slices.
